Father and son Bras faithfully recreate the cuisine of his hometown of Aubrac by using the rich bounty of Hokkaido. The idea for one of the house specialities was conceived during a summer stroll: ‘gargouillou’ is a wild herb and vegetable dish; the herbs and edible flowers picked by a contract farmer are used for various expressions of colour, shape, fragrance and taste. The ‘coulant’ (i.e. “flowing”) dessert lives up to its name as the sauce flows out when cut and is another must-try dish.
