Arashiyama Kitcho

The chef aims to convey the sentiments of the producers through his cooking – he observes tradition, but with creativity. He uses katsuo dashi to make dishes like tomato sorbet, using the flavours of olive oil and black pepper, yet without going too far outside the bounds of tradition. In early summer, the Shakotan Peninsula uni and Ezo awabi somen is served in dishes with a sense of coolness. Table seating is on the Uchiura Bay side; there are also tatami rooms with the design of the main location in Kyoto.
